I’ve always thought I’m made of water. I love swimming and could swim all day. I cry easily, I sweat easily and when I dance I’ve been compared to sea creatures. I even like drinking water. I must be made of water.

After watching Pirates of the Carribean On Stranger Tides, I’ve decided. I must be a Mermaid (either that or a jellyfish…?!?)

My Gooey Chocolate Brownie. 

200g dark chocolate
125g unsalted butter
200g light brown sugar
1tsp vanilla
2 large eggs
160g plain flour
110g macadamia halves

Melt chocolate and butter. Stir in sugar and vanilla, add eggs. Add in sifted flour. Bake in 9” square tin on 170 degrees C for 35-40 minutes. 

Good recipe to make with kids, omit nuts. I would bake in mini muffin pan next time and adjust time. 

For dairy free brownies.
Use dairy free 70% cocoa chocolate and substitute butter with margarine.
