Very chewy Anzac Cookie recipe from Masterchef magazine. 

I really liked the orange zest, a refreshing change, but honestly, these didn’t taste like Anzac Cookies at all. 

Not my go to Anzac Cookie recipe but still a good cookie. Should be renamed Orange Coconut Oat Cookie. 

165g brown sugar
150g plain flour
90g rolled oats
75g shredded coconut
1 orange zested
45g macadamia finely chopped
150g butter
90g honey
1/2 tsp bicarbonate of soda

Mix the first 6 ingredients together in bowl. Melt butter in saucepan with honey. Simmer 3 mins till thicken, remove from heat, add bicarb soda and 2 Tbsp water. Pour honey mixture into dry ingredients. Mix well, cool 10 mins. 
Shape and bake in oven preheated to 170 degrees C for 12 minutes.
